The phrase "There is a limit on the maximum number of products
that the system can handle" means there is a limit on the number
of products. It does NOT mean there is a limit on the
number of products * their stock.

just to confirm that the limit is not on the number of a particular
product, but on the numbers of kinds of products, right?

The limit is on the number of products, where each product has
a unique product identifier. This limit has nothing to do with
quantities of products.
